During this flu season, this is one of my favorite soups to make. Not only is it nutrient-packed, it’s delicious too!
ReplyDeleteIngredients:
1) 6 cups water
2) 1 tablespoon (15 ml) avocado oil
3) 1 diced onion
4) 1 inch turmeric root
5) 2 bulbs garlic minced
6) 2 inch piece of fresh grated ginger
7) 2 cups chicken soup stock (my special recipe)
8) A few slices of dried astragalus root
9) 2 cups fresh, sliced shiitake mushrooms
10) 1 large reishi mushroom
11) 2 small chopped red chili peppers (optional)
12) 1 juiced lime
Instructions:
1) Bring water to boil in large pot.
2) Sauté garlic, ginger, onions, until soft. Add contents to water.
3) Add broth, shiitake, astragalus, chili, reishi. Simmer covered for two hours.
4) Add salt and pepper to taste
